The Pacamara is a proud native of El Salvador being originally crossed locally when a farmer wanted the unique but different tastes and growing qualities of two heirloom coffees: the Pacas and Maragogipe. The often savory flavors and visually eye catching large size of the coffee beans have made Pacamara a loved coffee variety the world over. Here it is given an anaerobic processing after harvesting and so we end up with intense aroma and flavors
The beautiful family run El Carmen Estate is located in the Santa Ana mountains in Western El Salvador. They process both coffee cherries from their own orchards as well as surrounding farms. The wet mill is a well run facility that also has capacity for honey, natural and washed coffees.
Don Fernando and his family have owned and been operating El Carmen since 1920. Elevation is 1350 masl.
